No-bake healthy, delicious and a great on the go snack for you and the kids!
Makes 12 coconut balls
2 tsp coconut oil
1 3/4 cup of coconut flakes
3 tbsp honey
2 tbsp coconut milk
1/2 tsp vanilla extract
1/2 tsp cinnamon
- Melt the coconut oil and place it with 1 cup of the shredded coconut in a food processor until it reaches a paste like consistency ( it does not have to be completely smooth).
- Add the honey, coconut milk, vanilla and cinnamon and process until well combined. Add 1/2 cup of the shredded coconut and pulse until combined.
- Shape the mixture into 12 balls and coat with the remaining shredded coconut. Refrigerate for an hour and up to 5 days.
