Ingredients
2 Large Eggs
2 Large Ripe Bananas (mashed)
1/2 Cup Caster Sugar (or soft brown sugar)
1/3 Cup Coconut Oil
1/2 Cup Greek Yoghurt
1 Getbuzzing Banana Bar (crumbled)
1 3/4 Cup Whole Wheat Flour (or any flour)
2 tsp Cinnamon
1 1/2 tsp Baking Powder
Pinch of Salt
For Crumb Topping:
1/2 Cup Flour (whichever flour you have chosen)
1/2 Cup Brown Sugar
1/4 Butter

Instructions

Heat the oven to 180°C. Grease and line a 9×5 inch loaf pan.

For the crumb topping, place the flour, brown sugar and cinnamon in a medium bowl. Rub in the butter with your fingertips until crumbs form. Refrigerate until ready to use.

Combine flour, cinnamon, baking powder and a pinch of salt in a large mixing bowl. Whisk together eggs, banana, sugar, coconut oil and greek yoghurt in a separate large measuring jug. Pour wet into dry ingredients and crumble your Getbuzzing Banana Bar. Gently fold in, do not overmix!

Place the batter in the prepared loaf tin and evenly sprinkle with the crumb topping.

Bake for around 50-60 minutes, or until a toothpick inserted comes out clean. Cool in the pan for 10 minutes, then remove to a cooling rack to cool completely and enjoy!
