Chocolate Coated Cookie Dough Balls

Ingredients

  • 1 & 1/4 cup coconut flour
  • 1/4 cup coconut sugar or honey
  • 1/4 cup coconut oil (melted + cooled)
  • 2 tbsp milk of choice (we used oat milk)
  • 1 tsp vanilla extract
  • 1 pinch sea salt
  • 1/3 cup chocolate chips

For the chocolate coating

  • 1 cup chocolate chips
  • 1 tsp coconut oil

Instructions

  1. Mix all ingredients together except chocolate chips. Fold in 1/3 cup chocolate chips.
  2. Set bowl in the freezer for 10 minutes (this will make it easier to roll into balls).
  3. Roll dough into balls (about 1 heaping tbsp each) and set in the freezer for at least 1 hour. 
  4. Melt 1 cup chocolate chips with 2 tsp of coconut oil in the microwave in 30 second intervals, stirring between each.
  5. Dip each cookie dough ball into melted chocolate and set onto a parchment paper-lined plate. Top with sea salt and set back into the freezer for at least 1-2 hours.
