- Medjool Dates: 2 1/2 cups pitted
- Chocolate or Vanilla Protein Powder - 1/2 cup
- Desicated coconut - 1 cup
- unsweetened cocoa powder - 1/4 cup
- Flaxseeds - 1/2 cup
- Coconut Oil (melted) - 1/2 cup
- Vanilla extract - 1/2 teaspoon

Instructions

- Add the dates to a saucepan with 1 tbsp of water and cook down until dates are soft and combined.

Add all dry ingredients to a large bowl.

Add the cooked Medjool dates and coconut oil to the dry ingredients and mix well - you may need more or less coconut oil depending on consistancy (you want the mixture to stick together)

Use 2 tsp to measure and roll each scoop into a smooth ball.

Roll each ball in the remaining coconut to coat and sprinkle with some flaxseeds.

Serve and store in the refrigerator.
